Herbal remedies for winter

Onion and honey syrup

1 lb onions
8 oz garlic
1 pint sunflower oil
¼ pint honey

Peel and finely slice the onions and garlic and put them in a covered dish with the oil. Cook slowly in a low oven until very soft. Strain well and add the remaining ingredients. Bottle and cork. Shake before using. Take up to 1 teaspoon three times a day.

Hot toddy

1 piece root ginger
2 teaspoons caraway seed
1 bottle whisky
Grated zest and juice of 1 lemon
12 oz light brown sugar
8 oz large fat raisins

Bruise the ginger and caraway seeds and put them into a wide-necked jar with all the other ingredients. Seal and leave for 3 weeks, shaking daily, then strain and rebottle. Drunk by itself or with hot water this toddy is delicious. However alcohol wastes Vitamin C which is needed to fight off a cold. Flu or colds benefit from a simpler version of fresh ginger (sliced), lemon juice, honey and cinnamon with boiling water poured on and stirred well - deliciously warming.
